Is anyone going to Mexico anytime soon?
As I was baking, I sadly discovered that I am almost out of vanilla. I will admit that I am spoiled (and possibly a bit high-maintenance) when it comes to baking vanilla. What can I say? Not any old vanilla will do. Mexican vanilla has an aroma and taste that just can't be beat. I have tried to find another brand that I like just as well, but nothing else even comes even near comparison. The problem is that one can only obtain Mexican vanilla by visiting Mexico and bringing it back . . . nope not even on the internet.
So anyone going to Mexico anytime soon? I would be oh so grateful.

We are the same way! As soon as the vanilla is gone it's time to go to Mexico again. Luckily we bought a few last time we went so hopefully we'll make it until we go again. I'll check with you next time we go (but it might be a while) to see what your vanilla status is. :)

My sister in law made us some vanilla for Christmas... Two vanilla beans in a bottle of vodka. The alcohol cooks right out! ;) I actually haven't used it yet--but I hear it's fantastic.

I have heard of making my own vanilla with Vodka, but I can never find anyone to tell me the ounce-to-vanilla bean ratio. I guess it is time to do some googling.

P.S. I looked it up last night and it is 1 cup of vodka to 3 vanilla beans. I also looked on my mexican vanilla bottle and it looks like they use rum and no vodka to make theirs. I will have to run some trials at my house.

I was so intrigued by the vodka vanilla idea that I looked it up as well, here is what I found:

Although (and this comes from a non-drinker) rum makes more sense in that I have been told that rum is quite sweet and I am aware of a number of dessert recipes that call for rum. I'll make you a deal, you make the rum vanilla and I'll make the vodka vanilla and will share and taste-test! :)

Sounds perfect! After looking into more, I was just going to do the rum one anyway . . . but I will make extra. I have found that I can buy clear rum so that the vanilla bean is still where it gets its color.

I already have 36 of them. I ordered them from myspicesage.com because they are a TON less expensive than getting them from the store.
